Machu Picchu

Some of you might be wondering what Machu Picchu is, and some of you might already know what it is. But for those who do not, it is a well preserved pre-columbian Inca ruin located at 7,970 feet on a mountain ridge located at the Urabamba Valley in Peru.

The decor was modest, with huge paintings of local Peruvian sceneries, artifacts, a map of South America, clearly showing Peru's geographical location, and a flag displayed at the front of the restaurant with the Machu Picchu Peruvian Restaurant sign in San Mateo, California.

For appetizers, we had the mouth-watering Ceviche de Mariscos, a seafood mix marinated in fresh lemon juice with sliced onions, sweet potato and corn, followed by Antichucos, cubed beef heart marinated in a very special peruvian sauce in skewers (with just the perfect timing of cooking ) so tender and delicious.

Lomo Saltado, juicy strips of beef loin sauteed in tomatoes, onions, and sweet potato fries for our main course, followed by sips of Chicha Morada, a thirst quenching drink made out of corn, apple, and pineapple juice.

Remembering Mom on Mother's Day

What's a better way of celebrating Mother's Day than remembering your mother and paying a tribute to all her unconditional love, sacrifices, unselfish and caring ways, together with your loved ones (not all of them) on this special day. Now that I have children of my own, I have come to realize that she was not an ordinary mother; she was a supermom. Looking back, I am amazed at how she was able to juggle her time between her work and her devotion to her kids when we were growing up. She became a widow at the age of 41, her second and last marriage (her first husband was a casualty of war). She remained unmarried until the day she died, unconcerned for the attention quite a few gentlemen had given her. Instead, her time was spent religiously on her obligations to raise her three daughters, and managed to send them to one of the best private schools in the country at that time. On her spare time, she volunteered to teach impoverished young women on home economics, f...

Surprise Lunch Date

Photos Taken by Christina Kho It was a surprise when my daughter came home at noon today. Normally she comes home late in the evening staying at the school lab working on her projects. Looking starved and tired ( she has been sick with a bad cold), I offered to cook her a meal. Lately, the weather was getting colder at night, so I made sure we have soup for dinner when they all come home. There's always leftover food from the night before, which I sometimes eat for lunch the next day. My daughter must be really starved, for she reheated the pot of soup from the night before while I was preparing the ingredients of what I have decided to cook. I decided to cook the easiest meal I could make, which was Sugar Snap Beans with Shrimps . Took out the shrimps in a ziploc, open and run the warm water to ...

A Life's Work

A Life's Work "None of us are defined by our circumstances, nor are we defined by how other people perceive us. It is up to each one of us to define ourselves, and that is a life's work." "Each of us has the ability to lead a dynamic life by pursuing our unique goals and dreams. There are no limits to what we can do." the whole world is an opportunity; it is our work to make our imprints on the highway of life. an unlimited advantage chosen by a select few, not of power and money, fame, nor fortune. the select few never try to prove themselves, for they know who they are they are confident, not pretentious. they know where they come from and they know where they're going they are at peace with themselves and their surroundings they are whole and complete.
